🛒 Ingredients (Serves 2)
For the Steak:
2 New York strip steaks 🥩
Salt and black pepper to taste 🧂
2 tablespoons olive oil 🫒
1/2 cup unsalted butter 🧈
8 cloves garlic, smashed 🧄
Fresh rosemary and thyme sprigs 🌿
For the Frites (Fries):
3 russet potatoes 🥔
Water
Frying oil (vegetable, canola, or peanut oil)
Salt and pepper to taste 🧂
🍳 Instructions
1️⃣ Prepare the Steak:
Let the steaks rest at room temperature for 30 minutes.
Season generously with salt and black pepper on both sides.
2️⃣ Sear the Steaks:
Heat olive oil in a medium skillet over medium-high heat.
Once the oil is hot and begins to smoke, add the steaks.
Sear on all sides until a golden brown crust forms.
3️⃣ Add Butter & Aromatics:
Reduce heat to medium. Add butter, garlic, rosemary, and thyme to the skillet.
Baste the steaks with the melted butter continuously while they cook.
Cook to your desired internal temperature:
Medium Rare: 130°F (54°C)
Medium: 140°F (60°C)
Medium Well: 150°F (66°C)
Once done, let the steaks rest on a plate tented with foil.
🍟 For the Frites:
1️⃣ Prep the Potatoes:
Scrub the potatoes and cut them into 1/4-inch thick sticks.
Soak the cut potatoes in cold water for 30 minutes to remove excess starch.
Drain and pat dry thoroughly with a paper towel.
2️⃣ Fry the Potatoes:
Heat 2 inches of oil in a deep pot or fryer to 350°F (175°C).
Fry the potatoes in batches for 8-10 minutes until golden and tender.
Drain on a paper towel-lined plate and season immediately with salt and pepper.
🍽️ Serve & Enjoy:
Arrange the steak and frites on a plate.
Serve with a side of garlic aioli, Dijon mustard, or your favorite dipping sauce.
🌟 Pro Tips:
🧈 Butter Baste: Use a spoon to continuously pour the melted butter over the steaks for added flavor.
🍟 Crispier Frites: Double-fry the potatoes—first at a lower temperature (300°F) to cook through, then at a higher temp (375°F) to crisp up.
🌿 Herb Swap: Add a few sprigs of sage or thyme to the hot oil for an aromatic touch.
