Roasted Sausages with Peppers Onions and Potatoes Recipe

Ingredients:
– 2 tablespoons olive oil
– 2 large onions, sliced into wedges
– 2 red bell peppers, deseeded and cut into large chunks
– 2 garlic cloves, chopped
– 1 tablespoon fresh thyme leaves, chopped
– 500g (1 lb 2 oz) baby new potatoes, halved
– 12 plant-based sausages, pricked with a fork
– 200ml vegetable broth
– Salt and freshly ground black pepper, to taste
Instructions:
1. Preheat the Oven: Begin by setting your oven to 220°C (200°C fan) or Gas Mark 7. This high heat will help achieve that beautiful roasting effect.
2. Prepare the Ingredients: Grab a large resealable freezer bag and put in the sliced onions, red bell peppers, chopped garlic, thyme, halved baby potatoes, and plant-based sausages. Drizzle in the olive oil, seal the bag tightly, and give it a good shake to coat all the ingredients evenly. If you prefer, you can also use a large bowl to toss everything together.
3. Arrange for Roasting: Pour the coated mixture out into a large roasting tray, spreading it into an even layer. Make sure the sausages are not hidden under the vegetables. Season generously with salt and black pepper to enhance the flavors.
4. Start Roasting: Place the roasting tray in the preheated oven and roast for 30-35 minutes until the sausages and vegetables start to turn golden brown.
