Moroccan meatballs (Tajine de Kefta)

This Moroccan Meatball Tajine, or Kefta Mkaouara, is a must-try dish. Made with spicy minced meat and a zesty tomato sauce, it’s a true comfort dish.
Ingredients
For the meatballs (Kefta):
450 g lamb or beef mince
1⁄4 onion, grated
2 c. with fresh parsley soup, chopped
2 c. with fresh coriander soup, chopped
1 c. to paprika coffee
1⁄2 c. At coffee with cumin powder
1 c. with coriander powder coffee
1 c. At salt coffee
1⁄2 c. at pepper coffee
1⁄4 c. Having turmeric coffee
1⁄4 c. at cinnamon coffee
1⁄2 c. Ginger coffee powder (optional)
2 cloves of garlic, grated
For the tajine of kefta:
2 1⁄2 c. with olive oil soup
1 large onion, diced
3 cloves of garlic, finely chopped
1 1⁄2 c. to paprika coffee
1⁄4 c. Having turmeric coffee
1⁄4 c. at cinnamon coffee
1⁄2 c. at pepper coffee
1⁄2 c. At cumin coffee
1 c. At coriander coffee
1⁄4 c. with ginger coffee powder or 1 tsp. Freshly grated ginger coffee (optional)
1⁄4 c. At Cayenne pepper coffee
Salt to taste
1 c. with tomato concentrate soup
1 1/2 cups of grated tomatoes
2 c. with fresh parsley soup, chopped
2 c. with fresh coriander soup, chopped
1⁄4 cup of water
3-4 eggs (optional but strongly recommended)
Instructions
1️⃣ Preparation of meatballs:
Mix all the ingredients for the dumplings in a large bowl. Grind with your hands until it’s just combined. Form 3cm diameter dumplings and refrigerate while you prepare the rest of the ingredients and sauce. 🍖🌿
2️⃣ Preparation of the sauce:
Heat the olive oil in a large frying pan or a tajine (ideally in terra cuit) over medium-high heat. Stir fry the onion until it turns slightly golden. Add garlic and simmer for a minute. 🧅🧄
3️⃣ Adding spices:
Mix all the spices powder (paprika, turmeric, cinnamon, pepper, cumin, coriander, cayenne pepper, ginger) in a small bowl. Add this mixture to the onion and mix well. Then add the tomato concentrate and let it cook for a minute. 🍲
4️⃣ Adding tomatoes and herbs:
Add the grated tomatoes, chopped parsley and cilantro and a pinch of salt. Mix well, add water, reduce heat to medium-low, and let sauce simmer for 25-30 minutes, stirring occasionally. Taste and adjust seasoning if necessary. 🍅🌿
5️⃣ Cooking Dumplings:
Add meatballs to the sauce. Cover and keep simmering for another 10 to 15 minutes, or until meatballs are cooked to heart. Roll them over half cooked to coat them well in sauce. 🍖 🍖️
6️⃣ Eggs added (optional):
Make 3 or 4 holes in the sauce between the meatballs with a spoon. Crack an egg in each hole. Cover and let cook for another 10 to 15 minutes, until whites are caught and yellows cooked to your liking (usually still runny). 🥚🍳
7️⃣ Service :
Top with parsley or cilantro. Serve immediately with warm, crispy bread or couscous, with a fillet of extra virgin olive oil. You can also add green olives for even more flavour. 🍞 🌿🌿
